  • 90 grams gluten-free multipurpose flour (includes xantham gum)

  • ½ teaspoon baking soda

  • ½ teaspoon kosher salt

  • ½ teaspoon ground cinnamon.

  • 90 grams brown sugar

  • 50 grams granulated sugar

  • 70 grams GF Oat sourdough discard room temperature. (Can substitute other GF discard) d

  • 1 large egg yolk, room temperature

  • 1 teaspoon of vanilla

  • 140 grams of gluten-free old-fashioned oats
